This winter salad is very versatile and can be used as an entrée, side salad, easy week night meal, or used at Christmas dinner. The dressing is the perfect balance of sweet and tangy, which really brings the salad together. Yield: 6 servings
3 cups baby spinach 3 cups arugula 2 honey crisp apple, thinly sliced or cubed 1-2 avocado, cubed 4oz. fresh pomegranate arils ½ cup roasted pumpkin seeds 4oz. crumbled goat cheese Dressing: 1/3 cup apple cider vinegar 2 Tbs. pure maple syrup 1 Tbs. Dijon mustard ¼ tea salt ¼ tea pepper 2/3 cup high quality olive oil 1. To make dressing: whisk vinegar, syrup, Dijon, salt and pepper. Slowly add olive oil. Mix until well blended. Ready to use. It may be stored in the refrigerator for 7 days. Let come to room temperature before using. 2. Place greens in serving bowl. Top with rest of ingredients.
