I'm a big fan of an Aperol Spritz during brunch, an afternoon refresher or as starter to a meal to stimulate the appetite. If you are unfamiliar with Aperol, it's an aperitif or starter to prepare your stomach for dinner. Low in alcohol, Aperol has a flavor profile of bitter orange, herbal notes and rhubarb which pairs nicely with citrus or pineapple. With breakfast being my favorite meal of the day, I wanted to create a brunch friendly cocktail using a spin on one of my favorites.
