Spring has sprung! It may be hard to remember during this strange time, but spring is happening all around us. Although we can't do many of our normal activities, we can still enjoy spring blooming all around us. Our favorite part of spring is the rejuvenation in our health journeys. Read on to get Chef Brett's take on springing into health. Spring is always my favorite time of year to cook. And an easy time to eat a little healthier. As someone who always tries to eat in season and local, I get a little tired of winter vegetables. I get so excited when I see the first asparagus at the farmers market. Spring showers bring a beautiful abundance of mushrooms. I find it easier to cut back on meat and dairy when there is so much more variety of foods available to sauce, grill, and roast. Some of my favorites are ramps and I always like to make a big batch of ramp pesto to use on everything from eggs in the morning to hand made pasta and night. I even save some to use on my BLTs when the first crop of tomatoes shows up!
