Nothing says summer like fresh corn! This salad is an old family recipe. It's simple, but such a great way to combine seasonal flavors. This dish makes a great addition to any barbeque spread or serves as a perfect side for a meal on a hot summer night.
One of my favorite things about this recipe: it's ready in one step! It's also vegan and gluten-free! You can try mixing it up by adding different vegetables like cucumbers or bell peppers. Serve as is, on top of salad greens, or as a side to grilled meat or seafood. For a more complete vegan entree, add black beans or kidney beans.
