When I think of low carb recipes, I think of a lot of cheese, cream, and oils that are typical of a Keto type of diet. While eating a low carbohydrate diet is a great way to burn off excess fat in the body by instigating ketosis, dairy is known as one of the most inflammatory foods out there. There are many excellent fats we can use in place of dairy such as nuts, animal fats such as tallow and lard, and even avocado Here is a low carb recipe that uses coconut milk as the main fat source to make a delicious, loaded curry that is flavorful, packed full of all the nutrients of all the different veggies, and can be made with any protein you desire without affecting the amount of carbs per serving. Instead of brown rice, we use cauliflower rice here, which has the same texture as rice while cutting the carbs down by more than half.
Plus, curry spices such as turmeric and ginger have great anti-inflammatory properties, helping your body heal from whatever else you have been eating ;). Give it a try and taste how flavorful a low carb meal can be
