When the “you know what” really hit the fan, I went to stock up on groceries just like everyone else.  While my husband was focused on the shortage of paper goods,  I definitely took notice of the fact that the entire baking section was cleared out.

As a custom baker, I get my supplies through wholesalers but friends were starting to call me to see if I could spare any flour and yeast because they couldn’t get their hands on any - anywhere!  People started coming out of the woodwork asking for my help to teach them how to make sourdough.  Then BAM! Sourdough became
the thing to bake.  Was it because you couldn’t find yeast?  I read an article that said people like taking care of their sourdough starter like a pet - LOL.  Who knows what actually sparks a trend?!? As a YouTuber & blogger myself, this was music to my ears!  People are forced to stay at home, bored, looking for new hobbies.  Why not bake?  It’s very satisfying to create something tasty and delicious and fortunately, any recipe you can dream up is available at your fingertips  - through YouTube, Pinterest or even a simple Google search.

I’ve been milling my own grains for the past 15 years or so and have been obsessed with seeking out healthier alternatives to the recipes I love to eat. It brings me great joy (no pun intended) to see that people are realizing how important it is to eat healthier & commit to self-care.  We can empower ourselves & take charge of our own health! Making better eating choices when we’re out and having home-cooked meals made with quality, nutritious ingredients is key. The simplest changes can have a dramatic effect on how we feel!

Over time, flour has become so modified and hybridized.  As a result, many people are having difficulty digesting this modernized wheat and experiencing health issues and developing severe intolerances to it.  However, lots of folks are discovering that they are able to eat foods made from Ancient Grains as they are not genetically modified and are minimally processed.  That’s good news!  You may see some of these healthier flours out there but then you have to figure out how in the world to use them! 

I have created an Ancient Grain 1:1 Replacement Flour that makes healthy baking very simple!  It works in any recipe that calls for All-Purpose or Bread Flour.  Made from organic Kamut® and organic Einkorn Wheat, it has 22g of protein & 6g of fiber per cup! (Note:  it does contain gluten)
