Fall is, by far, my favorite season and a also great time to take advantage of a variety of fall vegetables and fruits available now.
Local farmers markets are a great source for items that maybe available year round, but are best in the fall. These include beets (red and golden), Brussels sprouts and cabbage, squash (including butternut, acorn and others), sweet potatoes, cranberries, persimmons, pomegranates and, of course, pumpkins. And more and more, these and many other items are being grown organically. My favorite way to prepare the vegetables is simply to peel and cube them is to toss with a little olive oil, season with salt and pepper and roast. They, along with the fruits and seeds mentioned, are a delicious, healthy and satisfying addition to a salad or meal. So check out your local farmers market or favorite grocery store and enjoy these and other great fall items!
