![]() Sourdough That's right, it's bread! *gasp* - health freaks eat gluten? DISCLAIMER: this does not apply to you if you have celiac disease, this is addressed to people who are either gluten intolerant or not sure what exactly gluten is! 💥 Yup,we do. True sourdough bread does not contain yeast & instead utilizes a lactobacilli based starter culture, it is also baked at a lower temperature which protects the integrity of the grain, preserves the nutritional value, and anti-nutrients such as phytic acid that are eliminated & gluten (that very difficult to digest plant protein found in wheat) is broken down - which makes it easier to digest.😀Be careful, most of the breads you find at grocery stores labeled as "sourdough" are made very quickly with yeast & the gluten proteins don't have time to break down as they would with bread made the traditional method, where fermentation takes place over 18 to 25 hours. The longer it's fermented, the easier it is to digest. Another reason to eat sourdough, its FLAVOR!
