Savory Ham & Cheddar Muffins with Greek Yogurt | Easy Breakfast or Snack Recipe

Ingredients

Directions
  1. Preheat your oven on the convection roast setting to 425°F. Just before placing the muffins inside, reduce the temperature to 375°F.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder.
  3. In another bowl, whisk the eggs, Greek yogurt, olive oil, and milk until smooth.
  4. Gently fold the wet ingredients into the dry until just combined.
  5. Stir in the ham, cheddar, and chives. Do not overmix.
  6. Spoon the batter into a greased or lined muffin tin, filling each cup about ¾ full.
  7. Bake for 18–22 minutes, or until golden on top and a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving.
